It's definitely a big decision, whether to go all-out, full-time in you dream business or to take slow baby steps (going part-time while building up your business on the side).
I tend to advocate franchising as a good middle ground(hence my twitter handle), and while there are both part-time and full-time franchise businesses out there the truth is that most of them still expect you to put in full-time hours, no matter what the franchisor may be trying to tell you!

Also, thought I'd add that home-based businesses are one possible solution, if a person has enough discipline, to break out of the corporate 9 to 5 on a more gradual basis.
The franchise advice blog FranchiseHelp.com (started by a fellow female entrepreneur, Mary Tomzack) has a good write-up on home-based franchising on their blog - the key takeaway is that it can be a good option for some, but you need to really understand what you're getting into before you dive in; as with any business, even home-based options require more time than anyone will tell you up front.
